Lentil Soup

🍽️ Servings: 4-6
Ingredients
- 2 Tbsp olive oil
- 2 diced onions
- 3 minced garlic cloves
- 5 Tbsp tomato paste
- 3 diced celery sticks with lots of leaves
- 2 diced carrots
- 2 bay leaves
- 1/2 cup chopped parsley
- 1 1/2 cup dried green lentils
- 1 litre water (or chicken/veg stock)
- Salt and pepper
- Vinegar (to taste)
- Mustard (to taste)
Instructions
- Saute onions in oil until translucent and browning (~7 minutes)
- Add garlic and cook until smell wears off (~3 minutes)
- Add tomato paste and cook until it turns orange
- Add celery, carrots, bay leaves, and parsley, and cook (~5 minutes)
- Add the lentils and a litre of water (or chicken/veg stock)
- Add salt and pepper as needed
- Simmer covered until lentils collapse easily between your fingers (~30 minutes)
- Add vinegar and mustard, adjust the seasoning
Notes
- This can be done with or without stock
- Lots of pepper is key
- The longer you let it sit before serving, the deeper the flavours
- For perfection, cut vegetables in brunoise (tiny cubes as small as the lentils)
- Can be served as a soup with bread or as a thicker mix with rice
