Lentil Soup

Lentil Soup
⏱️ Prep time: 15 min 🔥 Cook time: 40 min 🍽️ Servings: 4-6

Ingredients

  • 2 Tbsp olive oil
  • 2 diced onions
  • 3 minced garlic cloves
  • 5 Tbsp tomato paste
  • 3 diced celery sticks with lots of leaves
  • 2 diced carrots
  • 2 bay leaves
  • 1/2 cup chopped parsley
  • 1 1/2 cup dried green lentils
  • 1 litre water (or chicken/veg stock)
  • Salt and pepper
  • Vinegar (to taste)
  • Mustard (to taste)

Instructions

  1. Saute onions in oil until translucent and browning (~7 minutes)
  2. Add garlic and cook until smell wears off (~3 minutes)
  3. Add tomato paste and cook until it turns orange
  4. Add celery, carrots, bay leaves, and parsley, and cook (~5 minutes)
  5. Add the lentils and a litre of water (or chicken/veg stock)
  6. Add salt and pepper as needed
  7. Simmer covered until lentils collapse easily between your fingers (~30 minutes)
  8. Add vinegar and mustard, adjust the seasoning

Notes

  • This can be done with or without stock
  • Lots of pepper is key
  • The longer you let it sit before serving, the deeper the flavours
  • For perfection, cut vegetables in brunoise (tiny cubes as small as the lentils)
  • Can be served as a soup with bread or as a thicker mix with rice
